About the Project
The CSU Field Guide is an epic digital tome, a broad 12-unit course in all things cheese. It contains hundreds of illustrations, interactive charts and helpful animations that demystify everything about cheese – like its ancient history, dairy farming basics, fermentation processes, sensory evaluation, and retail skills. It also includes pop-out guest essays from industry experts.
We worked closely with Dairy Farmers of Wisconsin to bring to life our field guide concept using visual cues like notebook sketch illustrations and scrollable animations that make the most detailed facts fun to watch and easy to digest. Have you ever wondered what gives gouda its umami flavor on a molecular level? Or how cheese artisans fine tune their craft to get specific flavors?
